Ricetta della settimana: tasche di pollo con carotine

 Oggi condivido on voi la mia nuova ricetta della settimana: tasche di pollo con carotine.

Today I share with you my new recipe of the week: chicken pouches with baby carrots.


                                                                                    




INGREDIENTI

  • 2 petti di pollo
  • 300 grammi di ricotta light 
  • 400 grammi di carotine pulite
  • 1 limone preferibilmente non trattato
  • 1 mazzetto di erbe aromatiche (timo, maggiorana, rosmarino)
  • 30 grammi di grana padano grattugiato
  • 1/2 bicchiere di vino bianco
  •  1 cucchiaino di zucchero 
  • noce moscata
  • un litro e mezzo di brodo vegetale
  • olio extra vergine di oliva
  • sale e pepe
PROCEDIMENTO

Dividete le carotine a metà, nel senso della lunghezza. Pulite le erbe aromatiche e tritatele finemente.
In una ciotola versate la ricotta e ammorbiditela lavorandola con una forchetta. 
Aggiungete il grana, la scorza grattugiata del limone e le erbette aromatiche tritate.
Insaporite con sale, pepe, e noce moscata.
Praticate un’incisione nel petto di pollo in modo da creare una tasca e farciteli con il composto per circa due terzi.
Chiudete l’apertura con degli stuzzicadenti.
Rosolate le tasche di pollo su entrambi i lati in una padella antiaderente senza aggiungere grassi.
Sfumate con il mezzo bicchiere di vino bianco  e terminate la cottura con il coperchio per venti minuti a fuoco bassissimo aggiungendo se necessita il brodo poco alla volta.
Rosolate le carotine in una padella antiaderente e spolverizzate con un pizzico di sale fino. Aggiungete un cucchiaio di olio, lo zucchero e il brodo rimasto. 
Cuocete per 20 minuti a fuoco dolce, mescolando di tanto in tanto.
Tagliate le tasche di pollo a fettine di circa due centimetri di spessore, aggiungete un pochino di sugo di cottura  e servitele con il contorno di carotine.

2 chicken breasts
300 grams of light ricotta
400 grams of clean baby carrots
1 lemon preferably untreated
1 bunch of aromatic herbs (thyme, marjoram, rosemary)
30 grams of grated Parmesan cheese
1/2 glass of white wine
 1 teaspoon of sugar
nutmeg
one and a half liters of vegetable broth
extra virgin olive oil
salt and pepper
METHOD

Divide the baby carrots in half lengthwise. Clean the aromatic herbs and chop them finely.
In a bowl pour the ricotta and soften it by working it with a fork.
Add the parmesan, the grated rind of the lemon and the chopped aromatic herbs.
Season with salt, pepper, and nutmeg.
Make an incision in the chicken breast to create a pocket and stuff them with the mixture for about two thirds.
Close the opening with toothpicks.
Brown the chicken pockets on both sides in a non-stick pan without adding fat.
Deglaze with half a glass of white wine and finish cooking with the lid on for twenty minutes over a very low heat, adding the broth a little at a time if necessary.
Brown the baby carrots in a non-stick pan and sprinkle with a pinch of fine salt. Add a spoonful of oil, the sugar and the remaining broth.
Cook for 20 minutes over low heat, stirring occasionally.
Cut the chicken pockets into slices about two centimeters thick, add a little cooking sauce and serve with the carrot garnish.
